Whether I am waking up to a regular day of work, going to pick up my daughter in Kansas, heading home at 1:30am after ordering produce for the following day, or going on a Sunday morning hike I am always thinking about food.
It’s an insatiable passion that has always been a very important part of my life. I find inspiration to create new dishes – such as my hearts of palm pasta – from my travels and a desire to take a product that I would not normally use and reimagine what it could be. One of my favorite things to do is collect cookbooks, so much so that I may soon need to create a bookshelf just to house the 100s of books I’ve collected on my travels.
If you ask my family and friends they will tell you that dreaming up and executing new dishes completely dominates my life. If you ask me, it has brought me incredible fulfillment. Over the last 20 years, I’ve learned that in order to have personal and business success in the world of food, you have to be 100 percent committed. With time, I have been able to take it from a pastime to a business and from a passion to a successful creative operation.
As e. baldi has steadily increased in popularity and received critical acclaim over the years, I find myself receiving more and more requests for advice from young chefs. I have drawn great inspiration from a number of fellow chefs, places, and experiences to build the foundation of my career and plan to use this blog as a way to share my knowledge with you. Forgive me if I don’t write often. I promise that when I do have a moment to put pen to paper, I will share with you from my heart.
